Did the test run on the 100 mile waffles using Finnriver flour. Threw in some WA honey and the Holmquist hazelnut flour. Not overly nutty or sweet. Just right for snacking and possibly to serve up with home made ice cream or macerated local fruit, just in case anyone is bringing any.

If only I was independently wealthy and could spend all my time working on local dishes. Flipping thru my pressure cooker book this morning and planning dishes for later in the season when other bounty hits the farmers markets. Love my pressure cooker.

So, I am going to try making cold smoked, apple cider braised salmon. I am going to test it out this week and see how it goes. I have not cold smoked before, so this will be a new experience. My plan B is strawberry icecream with local Skagit Valley strawberries and dairy from Golden Glen Creamery in Bow. I may make both, we will see.

Right now my plan is to make and bring a vegetable timable, most likely chard and leek. It will have some dairy product. I am also considering whole wheat waffles that could be used as the base of a dessert. If I have time to do a test run to make sure they are not krapp. What’s the word on attendees, Bean?

I have a cookbook that is a collection of old recipes gathered together by a newspaper in Kansas decades ago. It includes a recipe to make a ’mother’ and a recipe to make vinegar using yeast, bread, sugar and water. Have always wanted to make my own ’mother’. Tried to make red wine vinegar by exposing red wine to continued rotting. Failure. I may try one of the two other methods. Both take weeks.

Discovered Finnriver organic grains at our farmer’s market today – their wheat, comes from within 100 miles! I bought a bag of wheat berries. http://finnriver.com/index.php?page=store-grains

What to do about vinegear? Any wineries produce wine vinegar? Or anyone know of local apple cider vinegar?
Per Ron Zimmerman, Venturi-Schulze on Vancouver Island makes an aged Balsamico Vinegar. They use that at their 100 mile dinners.
Don’t think I’ll be able to make it to Vancouver Island. Was reading about making vinegar at home. Might be worth trying for something else; it takes at least 2 weeks.

Bringing a Hoodsport wine. Grapes grown locally, for sure. Either a Siegerrebe to compare with Bainbridge Island Winery, or the 04 Island Belle, or both. Island Belle may be on the downslide but it is such a great piece of local hx we might have to open it up and see. No other people I would rather do this with.
